They should release Fallout 1 and 2 on XBLA and PSN. Symphony of the Night is on XBLA, and I think Fallout should be next on that list. In fact, they should make them into Arcade games and then just put them on the Fallout 3 disc, or make it a pre-order bonus like the Fable Pub Games (which also comes in the Collector's Edition even if you don't pre-order).
